Two Corn Casserole

Ingredients

  • 1/2 c. butter
  • 3/4 c. minced green pepper
  • 1/3 c. minced onion
  • 3 Large eggs, well beaten
  • 1 (17 ounce.) can cream style corn
  • 1 (17 ounce.) can whole corn with liquid
  • 1 pkg. corn muffin mix
  • 1 c. cheddar cheese (opt.)

Directions

  1. Preheat oven to 350 degrees. Saute/fry peppers and onions in butter. Add in remaining ingredients. Pour into greased 2 qt casserole dish. Bake 50 to 55 min. Let stand 5 min before serving. Optional: 1 c. cheddar cheese sprinkled on top.
