Ingredients

  • 1 tbsp. vegetable oil
  • 1 1/2 c. minced onions
  • 2 c. thinly sliced carrots
  • 1 pound potatoes, unpeeled and cut in sm. pcs
  • 1 (14 1/2 ounce.) can tomatoes
  • 1 (19 ounce.) can red kidney beans, rinsed and liquid removed
  • 1 (19 ounce.) can white beans, rinsed and liquid removed
  • 4 c. water
  • 1 teaspoon dry basil leaves, crumbled
  • 1/4 teaspoon black pepper
  • 8 ounce. thinly sliced lean ham, cut in small pcs or possibly strips
  • 1 (10 ounce.) pkg. frzn, minced greens (mustard, turnip, collard)

Directions

  1. Heat oil in a 5 to 6 qt pot over medium heat. Add in onions and cook 3 min, stirring often. Add in carrots, potatoes, tomatoes, beans, water, basil, and pepper. Stir to break up tomatoes. Bring to boil. Reduce heat to medium. Cover and simmer 10 min or possibly till potatoes are barely tender. Add in ham and greens. Cover and simmer 10 min longer till vegetables are tender, stirring several times. Makes 8 servings.
