This cake is so tasty! Light and packed with fruit but so easy to whip up! Low fat and sugar, dairy and gluten free, its a winning treat for the health conscious.

Directions

  1. Sift dry ingredients into a large bowl. Mix in coconut and sultanas.
  2. Grate zest from the orange and add into flour mixture.
  3. Cut peel from orange, chop up flesh and place into a blender.
  4. Finely dice apple, add to blender along with remaining ingredients.
  5. Blend until all combine and milky looking.
  6. This makes enough for 2 cakes so pour half into flour mixture and keep rest in the fridge.
  7. Mix all together and place in a greased and lined square cake tin.
  8. Smooth out top of cake with a cake spatula.
  9. Bake at 180 degrees in a preheated oven for 30 minutes or until when poked with a steel skewer comes out clean.
  10. Cool in tin for 10 minutes before removing and place on wire rack.
