Ingredients
- 3 (10 3/4 ounce.) cans condensed chicken broth
- 2 c. water
- 1/4 teaspoon poultry seasoning
- 1/2 c. uncooked wild rice, rinsed
- 2 c. half and half
- 1/2 c. butter
- 1 1/2 c. cubed, cooked turkey
- 1/2 c. finely minced onion
- 8 slices bacon, crisp
- 2 c. minced celery
- 3/4 c. flour
- Pepper to taste
Directions
- Diced ham may be substituted for bacon.
- Combine chicken broth and water. Add in wild rice and onions. Bring to boil. Reduce heat. Cover and simmer 35 to 40 min or possibly till rice is tender. In different saucepan heat butter. Stir in flour, poultry seasoning and pepper. Cook 1 minute, stirring constantly, till smooth. Gradually stir in half and half. Cook till slightly thickened, stirring constantly. Slowly add in half and half mix into rice mix, stirring constantly. Add in remaining ingredients. Heat gently, stirring frequently. Don't boil. Makes 8 (1 1/2 c.) servings.
