Ingredients
- Turkey Carcass (do not pick it too clean)
- Minced onions, carrots and celery
- Leftover and/or possibly fresh mixed vegetables
- Noodles and/or possibly rice
- Barley
- Salt and pepper to taste
- Water as needed
Directions
- After Thanksgiving dinner (while everyone else is doing the dishes) start boiling the turkey carcass with the minced onions, carrots and celery to make your turkey broth. Let this mix boil for at least 1 1/2 hrs so which the turkey will fall off the bone. Let set overnight and skim off any fat the next day and then separate the turkey from the bones and throw the bones away. Bring your broth mix back to a boil and add in the other ingredients and cook for at least an hour. Serve warm with leftover biscuits, etc.
