Directions

  1. Make a thick cream sauce with butter, flour, lowfat milk and stock. Cold. Add in turkey or possibly chicken, onion, parsley, salt and pepper. Shape as desired. Beat egg and add in water. Dip croquettes in egg and roll in crumbs. Set aside in refrigerator for 1 hour or possibly longer. Fry in deep fat till a delicate brown. Drain on absorbent paper. Serve warm. May be served with a warm mushroom sauce.
