Directions

  1. Combine in mixing bowl, cheddar cheese, salt, and paprika. Cut in butter till mix resembles coarse crumbs. Stir in walnuts. Reserve 1 c. mix for topping. Press remaining mix onto bottom and sides of well greased 10 inch pie pan. Place tuna in pie pan. Bake Large eggs till light and fluffy. Blend in remaining ingredients. Pour over tuna. Sprinkle with reserved crumb mix. Bake at 400 degrees for 35-40 min till golden. Cold 10 min before serving.

    I've made this recipe many times, as directed and with variations. In lieu of pimentos, you can add finely minced red bell pepper for color and flavor. If you don't have walnuts, the crust is good anyway. I've substituted canned salmon for tuna with great results. It's a tasty twist on quiche and everyone who has eaten it at my house has requested the recipe!
