  • 1 pkt (16ounces) lb. cake mix
  • 1/2 c. Lowfat milk
  • 1/2 c. Mashed ripe banana, (about 1 large)
  • 2 x Large eggs
  • 1/2 c. Flaked coconut

Directions

  1. Another from Pampered Chef. This would be a good way to use up overripe bananas! Stacy
  2. Preheat oven to 350F. Grease bottom only of loaf pan. In a large bowl, combine lb. cake mix, lowfat milk, banana and Large eggs; mix well. Stir in coconut.
  3. Pour into loaf pan. Bake 55-60 min or possibly till cake tester inserted in center comes out clean. Cold on rack for 15 min; remove from pan & cold completely.
  4. Serving ideas: Top with sliced kiwifruit and top with vanilla ice cream and a Tbsp. of apricot preserves or possibly orange marmalade.
  5. *For added tropical taste, add in 1 tsp. rum extract to cake batter
