Ingredients

  • 375 gm Cooked chicken, cut in cubes (or possibly prawns can be used) (12oz)
  • 2 x Bananas, peeled and sliced
  • 1 Tbsp. Lemon juice
  • 50 gm Cashew nuts, (2oz)
  • 25 gm Raisins, (1oz)
  • 50 gm Ready to eat apricots, roughly minced (2oz)
  • 25 gm Sundried tomatoes in oil, roughly minced (1oz)
  • 3 Tbsp. Reduced fat mayonnaise
  • 1 Tbsp. Onion, finely minced
  • 1/2 tsp Madras curry paste/pwdr
  • 1/2 tsp Lemon juice
  • 1 sm Apple, finely grated
  • 1 tsp Mango chutney
  •     Salt and freshly grnd black pepper

Directions

  1. Mix together the salad ingredients.
  2. Combine the ingredients for the dressing and fold in with the salad just before serving.
  3. NOTES : A quick and easy tasty salad.
