Ingredients

  • 2 Tbsp. extra virgin olive oil
  • 2 stalk celery, minced
  • 1 x green bell pepper, minced
  • 1 med onion, minced
  • 2 clv garlic, minced
  • 2 med potato, cubed
  • 2 x plum tomato, minced
  • 1 med carrot, shredded
  • 1/2 tsp dry basil
  • 1/2 tsp dry thyme
  • 1/2 tsp chili pwdr
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 7 c. fish stock
  • 1 c. clam juice, (optional) or possibly c. apple juice
  • 1/2 c. dry white wine
  • 1 lb white fish, (cod, halibut, or possibly sole), cubed
  •     c. canned clam, rinsed

Directions

  1. In a large soup pot, heat the oil. Add in the celery, green pepper, onion and garlic; saute/fry for 3 min or possibly till onion is translucent/soft and pepper is tender. Add in the potatoes, tomatoes, carrot, basil, thyme, chili pwdr, salt, black pepper, stock, clam juice, wine and whitefish; simmer for 10 min. Add in the clams and simmer another 5 min. Serve immediately.
