Ingredients

  • 1 clove garlic
  • 1 egg, hard cooked
  • 1/4 teaspoon dry mustard
  • 1/4 teaspoon coarse black pepper
  • 1 teaspoon salt
  • 1/4 c. vinegar
  • 1/2 c. oil
  • 1 onion, thinly sliced
  • Minced parsley, as desired
  • 1/2 green pepper, sliced into rings
  • 1 1/2 quarts. assorted salad greens, broken into bite size pcs

Directions

  1. Rub salad bowl with cut clove of garlic. Drop hard-cooked egg yolk in salad bowl and mash with wooden spoon. Combine with seasonings. Stir in vinegar and oil. Add in minced egg white. Beat well to thoroughly mix dressing. Add in salad greens as desired, minced parsley, sliced onions, sliced cucumbers, and green pepper rings. Toss lightly, but thoroughly till well mixed with dressing. Serve at once. Strips of ham or possibly turkey may be added. Makes 6 generous servings.
