Ingredients
- 1 yellow squash (optional)
- 2 lg. onions, minced fine
- 1 can Ro-Tel tomatoes (substitute plain tomatoes and minced chilies)
- 1 c. rice
- 1 1/2 quarts. chicken broth
- 1 tbsp. green onion tops
- 6 (4 inch) tortillas, cut in strips 1/4 inch wide (add in last 5-8 minutes.)
- Salt and pepper to taste
Directions
- Simmer all ingredients till tender. Serve with Orbit tortilla chips crumbled on top. Top with grated Monterey Jack cheese and some slices of ripe avocado. Enjoy.
