Happy Spring! It's so nice to see our roses blooming, and our garden has come back to life.
Our wisteria was in its full glory, last weekend, making the bees very happy. Our tomato plants are tiny little guys, and I am so looking forward to
our homegrown tomatoes. (Thank you, my wonderful husband.) It'll be a few more months, but the wait will be worth it.
The extra hour of light, makes cooking dinner more enjoyable. Right now, I'm going through a temporary health setback-- nothing serious. My thyroids are acting a bit wonky, so that leaves me feeling super fatigued by the time I get home from work. %20It'll%20be%20a%20few%20more%20months,%20but%20the%20wait%20will%20be%20worth%20it.%3C/p%3E%3Cp%3EThe%20extra%20hour%20of%20light,%20makes%20cooking%20dinner%20more%20enjoyable.%20%20Right%20now,%20I'm%20going%20through%20a%20temporary%20health%20setback--%20nothing%20serious.%20My%20thyroids%20are%20acting%20a%20bit%20wonky,%20so%20that%20leaves%20me%20feeling%20super%20fatigued%20by%20the%20time%20I%20get%20home%20from%20work.%20%20%20My%20doctor%20and%20I%20are%20adjusting%20some%20meds,%20which%20might%20take%20a%20few%20more%20weeks%20to%20get%20my%20energy%20level%20back.%20%20In%20the%20meantime,%20I%20relish%20any%20recipes%20that%20don't%20require%20a%20lot%20of%20work.%20%20%20I%20try%20to%20make%20a%20meatless%20dinner%20at%20least%20once%20a%20week%20so%20I%20can%20limit%20my%20red%20meat%20intake.%3C/p%3E%3Cp%3EAs%20I%20was%20driving%20home,%20I%20was%20taking%20a%20mental%20inventory%20of%20what's%20in%20my%20fridge%20and%20pantry.%20%20I%20shop%20at%20Trader%20Joe's%20on%20Fridays,%20so%20I%20had%20a%20fresh%20package%20of%20their%20flour%20tortillas%20in%20my%20grocery%20bag,%20and%20I%20had%20picked%20up%20a%20bag%20of%20their%20packaged%20three-cheese%20mix.%20I%20was%20planning%20on%20making%20quesadillas%20for%20dinner,%20since%20those%20are%20always%20so%20quick%20to%20do.%3C/p%3E%3Cp%3EIt's%20funny%20how%20I%20hoard%20recipes%20in%20my%20brain.%20%20Suddenly,%20I%20remembered%20this%20recipe%20for%20Tortilla%20and%20Black%20Bean%20Pie,%20that%20I%20had%20bookmarked%20in%20one%20of%20my%20Martha%20Stewart%20Everyday%20Food%20cookbooks%20a%20very%20long%20time%20ago.%20%20%20I%20always%20thought%20that%20it%20looked%20so%20pretty,%20as%20a%20layered%20tortilla%20pie.%20%20Well,%20what%20do%20you%20know?%20I%20had%20all%20the%20ingredients!%20Quesadilla%20could%20wait%20for%20another%20time.%20It%20was%20time%20to%20make%20this%20recipe:%3C/p%3E%3Cp%3EOnions,%20scallions,%20fresh%20garlic%20and%20jalapenos...%20check.%20%20Chop,%20chop,%20chop.%3C/p%3E%3Cp%3ECanned%20black%20beans%20are%20a%20pantry%20staple.%20We%20love%20them,%20especially%20mixed%20with%20corn.%20%20This%20recipe%20is%20very%20simple%20to%20make.%20%20Onion,%20garlic%20and%20jalapeno%20are%20seasoned%20with%20salt%20and%20pepper,%20and%20a%20little%20cumin.%20%20They%20are%20sauteed%20until%20just%20soft...%20just%20a%20few%20minutes.%3C/p%3E%3Cp%3EDrained%20and%20rinsed%20black%20beans%20are%20added%20to%20the%20skillet%20and%20a%20bottle%20of%20beer%20(or%20water)%20and%20then%20simmered%20until%20the%20liquid%20is%20pretty%20much%20evaporated--%2010-12%20minutes.%3C/p%3E%3Cp%3EA%20spring%20form%20pan%20is%20perfect%20for%20layering%20the%20flour%20tortillas%20with%20the%20bean%20and%20corn%20filling.%20I%20used%20the%20bottom%20of%20the%20pan%20as%20a%20guide,%20to%20trim%20the%20tortillas.%20%20This%20took%20less%20than%20one%20minute.%3C/p%3E%3Cp%3EThere's%20a%20little%20bit%20of%20liquid%20left,%20but%20I%20turned%20the%20heat%20%20off%20and%20added%20some%20frozen%20corn,%20along%20with%20chopped%20scallions.%3C/p%3E%3Cp%3EPlacing%20a%20flour%20tortilla%20on%20the%20bottom%20(I%20used%20a%20little%20non-stick%20spray%20for%20insurance),%20I%20used%20a%20slotted%20spoon%20to%20evenly%20spread%201/4%20of%20the%20filling,%20and%20then%20added%20about%201/2%20cup%20of%20grated%20cheese.%20%20I%20repeated%20this%20and%20then%20popped%20this%20into%20a%20400F%20oven%20for%20about%2020%20minutes.%3C/p%3E%3Cp%3EAs%20I've%20written%20many%20times--%20there%20is%20seldom%20much%20extra%20t%20time%20for%20me%20to%20%22food%20style%22%20when%20dinner%20is%20ready%20on%20a%20week%20night.%20My%20men%20are%20hungry,%20and%20I'm%20tired%20and%20hungry.%20%20So,%20I%20snapped%20a%20shot%20or%20two,%20not%20really%20sure%20if%20I%20would%20even%20post%20this%20recipe.%3C/p%3E%3Cp%3EDinner%20is%20ready,%20in%20just%20under%20an%20hour.%20On%20a%20Friday,%20after%20a%20very%20hectic%20work%20week.%20Amen.%3C/p%3E%3Cp%3ETASTING%20NOTES:%20What%20you%20don't%20see%20is%20the%20cilantro%20nor%20salsa,%20that%20is%20the%20perfect%20garnish%20for%20this%20dinner.%20%20%20My%20opinion%20of%20this%20dish%20is%20very%20simple.%20I%20like%20it!%20%20It's%20good.%20It's%20flavorful.%20It's%20hearty.%20It's%20meatless,%20but%20still%20very%20filling.%20My%20husband%20went%20back%20for%20seconds,%20and%20I'm%20not%20surprised.%20He%20loves%20black%20beans%20and%20corn%20so%20I%20knew%20this%20would%20please%20him.%20%20Even%20though%20I%20used%20one%20whole%20jalapeno,%20this%20was%20not%20at%20all%20spicy.%20%20The%20beer?%20The%20beans%20didn't%20taste%20like%20beer,%20in%20a%20good%20way.%20%20I%20love%20beer,%20but%20I%20would%20think%20it%20adds%20just%20a%20bit%20more%20flavor%20to%20the%20beans.%20I'm%20sure%20you%20could%20use%20water,%20instead.%3C/p%3E%3Cp%3EThe%20tortilla%20edges%20get%20a%20little%20crunchy,%20from%20the%20melted%20cheese.%20The%20interior%20of%20the%20tortillas%20becomes%20very%20soft--%20pretty%20much%20like%2
