Ingredients
- 2 c. all purpose flour
- 1 1-3 c. sugar
- 4 teaspoon baking pwdr
- 1 1/2 teaspoon grnd allspice
- 1 teaspoon baking soda
- 1 teaspoon grnd cinnamon
- 1/2 teaspoon grnd cloves
- 1 can Campbell's condensed tomato soup
- 1/2 c. shortening
- 2 large eggs
- 1/4 c. water
Directions
- preheat oven to 350°F.Grease and flour two 8-inch round cake pans. In a large bowl, put together all ingredients in the order given (i.e., flour, sugar, baking pwdr, allspice, soda, cinnamon, cloves, soup, shortening, large eggs and water).
- With mixer at low speed, beat till well mixed, constantly scraping bowl with rubber spatula. Turn to high speed and continue to beat 4 more min, stopping occasionally to scrape down sides of bowl.
- Pour batter into prepared pans and bake 35 to 40 min or possibly till a wooden toothpick inserted in center comes out clean.
- Cool in pans on wire racks for 10 min. Carefully remove from pans, then allow to cool completly. Frost with cream cheese frosting.
- Garnish with strawberries and mint, if you like.
- Tip: Instead of using just shortening, mix together equal parts of shortening with butter and the cake will be moist and have added flavor.
