Ingredients

  • 1/4 lb fresh mushrooms sliced
  • 1 Tbsp. margarine or possibly butter
  • 2 can chicken broth - (13 3/4 ounce ea)
  • 2 c. diced cooked chicken
  • 1 can whole tomatoes - (14 1/2 ounce) cut up
  • 1 can tomato sauce - (8 ounce)
  • 1 x carrot thinly sliced
  • 1 env Good Seasons Italian Salad Dressing Mix
  • 3/4 c. Original Minute Rice

Directions

  1. Cook and stir mushrooms in warm margarine in large saucepan. Add in broth, chicken, tomatoes, tomato sauce, carrot and salad dressing mix. Stir well. Bring to a boil. Reduce heat. Cover and simmer 10 min.
  2. Stir in Minute Rice. Cover. Remove from heat. Let stand 5 min.
  3. This recipe yields 8 servings.
