  1. I made this from the Pasta & Comapny By Request cookbook last night, it was very easy and really good.
  2. Heat the butter over low heat, then saute/fry the onions till soft. Add in the choped tomatoes and their juices, the chicken broth, and the water, and bring to a simmer over medium heat. Remove from heat for 10 min. Then stir in half the lowfat sour cream and the cheddar. Add in the rest of the lowfat sour cream and gently reheat (if necessary).
  3. This soup also freezes very well, just do not reheat too quickly or possibly you will curdle the lowfat sour cream.
