Ingredients
- 1 3/4 cup flour
- 3/4 cups pure unsweetened cocoa powder
- 1 1/2 t. baking powder
- 1 1/2 t. baking soda
- 1/4 t. salt
- 1 13 ounce box soft tofu
- 1 1/4 cup sugar free maple syrup
- 3 T. canola oil
- 1 cup skim milk
- 1/3 cup boiling water
- frosting:
- 2 cups of powdered sugar
- 3/4 cup of peanut butter
- 1/4 cup unsalted butter
- 1/4 cup skim milk
- 1 t. vanilla
Directions
- sift and combine flour, cocoa powder, baking powder and soda, and salt
- process tofu in a food processor
- then add oil and syrup and process
- add the tofu combination to the dry ingredients until combine
- add the boiling water until just combined
- pour evenly into the two cake pans and bake for 30 minutes or until the knife comes out clean
- cool for 20 mins in pans on wire rack
- then cool out of pan on wire rack till completely cool
- frosting:
- add all ingredients together with an electric mixer
- frost how desired
