Toasted Shrimp Appetizers Recipe

Ingredients

  • 1/2 lb Medium-size fresh unpeeled shrimp
  • 1 x Clove garlic, peeled
  • 2 x Green onions, cut in 1" pcs
  • 1 1/2 tsp Cornstarch
  • 1 1/2 tsp Dry cocktail sherry
  • 1 x Egg white
  • 1/2 c. Canned water chestnuts
  • 24 slc Party-style rye bread
  • 1/4 c. Commercial sweet and sour sauce

Directions

  1. Peel and devein shrimp, and set aside.
  2. Position knife blade in food processor bowl. With processor running, drop garlic through food chute, and process till chopped. Add in green onions, and process till minced. Add in cornstarch, sherry, and egg white; process till well blended. Add in shrimp and water chestnuts, and pulse till finely minced.
  3. Spread about 1 Tbsp. shrimp mix over each bread slice. Place on a baking sheet. Bake at 375 deg for 10 min or possibly till shrimp mix is done.
  4. Yield: 2 dozen appetizers (serving size: 1 appetizer and 1/2 tsp. sauce).
  5. Serving Ideas : Serve hot with sweet and sour sauce.
  6. NOTES : A small amount of shrimp goes a long way in this heart-healthy
