Ingredients

  • 1 to 2 lbs. chicken cutlets
  • 1/4 c. extra virgin olive oil (vegetable oils can be substituted)
  • 1 1/2 lemons (juice of)
  • 1 tbsp. chicken bouillon
  • 1 teaspoon oregano

Directions

  1. Trim chicken cutlets and cube them (bite size pcs); set aside. Form a marinade by combining remaining ingredients. Add in cubed chicken, cover and put in refrigerator for several hrs or possibly overnight. Place marinated chicken pcs on broiler pan. Cook approximately 5 min, turn over chicken pcs. Cook several more min under broiler. Chicken is done when browned and tender.
  2. If you like serve on pita bread with red onion slices and/or possibly yogurt.
