These were the result of a few things.I had a major, major craving for chocolate cookies after supper one night.
I couldn’t find an oatmeal chocolate chip cookie recipe that worked.
I had limited amounts of lots of different kinds of chocolate.
So this is like a kitchen sink cookie, except there is coconut, only brown sugar, no raisins or fruit.
So..I guess they are nothing like kitchen sink cookies, excepting the concept of putting everything but the kitchen sink in. You put every kind of chocolate in and dang it, if there WAS a kitchen sink made outta chocolate, it would be in there.
Ingredients
- 1 cup of margarine
- 1 1/2 cups of brown sugar
- 2 eggs
- 2 1/4 cups of flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp salt
- 2 cups of quick oats
- 1 cup sweetened coconut
- 1/2 cup dark chocolate chips
- 1/2 cup milk chocolate chips
- 1 cup of semi-sweet chocolate chips
- 2 tsp vanilla
Directions

Cream together the butter and sugar, then add eggs and vanilla.

Whisk together the flour, baking soda, baking powder and salt. Then add in the flour…

Then add in the oats.

Then add in all the chocolate and coconut. If you want, feel free to add in more dark or milk chocolate. Another 1/2 cup of dark would be lovely. Or white chocolate. Or perhaps you feel like more milk chocolate. Point being, more chocolate is better.

Place on an ungreased cookie sheet, and if wanted, flatten slightly. Cook at 350 degrees for 10-14 minutes.

And do try them warm and oh-so chocolatey gooey straight from the oven.
