- 3" knob of galangal (or ginger) sliced into thick pieces
- 4 Thai chilies, sliced
- 3 tablespoon fish sauce
- 1/4 c. fresh lime juice
- fresh cilantro or fresh Thai basil, lightly chopped for garnished
