Ingredients

  • 2 x Large eggs
  • 1 1/4 c. granulated sugar
  • 2 c. fruit cocktail, liquid removed but reserve liquid
  • 2 c. flour
  • 2 tsp soda
  • 1/2 tsp almond extract
  • 1/2 tsp vanilla extract
  • 1/4 c. brown sugar
  • 1 c. minced pecans
  • 1 stk butter
  • 2/3 c. granulated sugar
  • 1/2 c. cream or possibly evaporated lowfat milk
  • 1 c. flaked coconut
  • 1/2 tsp almond extract
  • 1/2 tsp vanilla extract

Directions

  1. Cake: In large bowl of electric mixer beat Large eggs and granulated sugar till smooth. Sift flour with soda; add in to egg and sugar batter. Add in reserved fruit cocktail liquid and flavorings. By hand, mix in fruit cocktail, then pour into lightly greased and floured 9xl3" pan. Mix brown sugar and nuts together and sprinkle on top of batter. Place in 325-degree oven and bake for 40 min. Spread icing on cake while warm.
  2. Icing: Boil butter, sugar and lowfat milk for 3 min. Add in coconut and flavorings and spoon over cake as soon as cake is removed from the oven.
  3. Cut into squares when cold.
  4. This recipe is quick and easy, and can be made with ingredients at hand.
  5. Serve it to those guests who strike unexpectedly.
  6. Makes 1 - 9 x 13 inchcake (18 servings).
