Ingredients
- 1 c. yellow cornmeal
- 3 c. cool water
- 1 or possibly 2 onions, minced
- 1 clove garlic, minced
- 1 green pepper, minced
- 2 tbsp. Wesson oil
- 1 pound grnd beef
- 2 1/2 c. tomato sauce
- 1 c. whole kernel corn
- 1/2 c. minced ripe olives
- 2 tbsp. chili pwdr
- 2 teaspoon salt
- 1 c. grated cheese
Directions
- Soak cornmeal in the water. Fry onions, pepper and garlic in the oil, then add in meat and cook till lightly browned. Stir in the tomato sauce, liquid removed cornmeal, corn, olives and seasonings. Mix well. Pour into a greased casserole dish and bake 60 min at 375 degrees. Add in grated cheese after 30 min of baking.
