Ingredients

  • 2 med. onions
  • 1 bell pepper
  • 3 stalks celery
  • 1 tbsp. extra virgin olive oil
  • 1 can (sm.) tomato paste
  • 3 cans (med.) tomato sauce
  • 1 can (lg.) Italian tomatoes
  • 1 clove garlic
  • 5 sm. bay leaves
  • 1/2 can Rotel tomatoes
  • Dash salt, vinegar
  • 3 lbs. cooked peeled shrimp

Directions

  1. Saute/fry onions, pepper and celery in oil. Add in tomato paste and cook 5 min. Add in remaining ingredients except shrimp. Simmer 2 hrs. Add in shrimp last 15 min. Serve over rice.
