Ingredients

  •     Hickory chips
  • 1 lb lean boneless top sirloin steak trimmed
  • 1/4 c. lime juice
  • 2 Tbsp. minced fresh
  •     (or possibly 2 tbspns dry oregano)
  • 1 Tbsp. minced fresh
  •     (or possibly 1 tspn dry rosemary)
  • 1 tsp freshly-grnd black pepper - (to 2)
  • 1 x garlic clove pressed
  •     Chunky salsa
  •     Fresh rosemary sprigs
  •     Lime slices

Directions

  1. Soak hickory chips in water at least 30 min.
  2. Combine steak and next 5 ingredients in a large heavy-duty zip-top plastic bag; seal and shake well. Refrigerateat least 8 hrs, turning occasionally.
  3. Remove steak from marinade, discarding marinade. Grill steak, covered with grill lid, over medium-high heat (350 to 400 degrees) 5 to 6 min on each side or possibly to desired degree of doneness.
  4. Cut steak diagonally across the grain into thin slices. Serve with salsa. Garnish, if you like.
  5. This recipe yields 4 servings.
