Tex-Mex Turkey Chili with Beans

Easy crockpot or Dutch oven recipe I came up with when I found some ground turkey on sale. Works on the stovetop, too.

This recipe is fairly low fat, as turkey is 40% leaner than ground beef.

Serve with cornbread or crackers.

Ingredients

  • 1 lb. ground turkey, cooked
  • 3 scallions, chopped, sauteed, or 1/2 small onion
  • 2-3 cloves garlic, chopped, sauteed
  • 1 tbs. olive oil
  • 1 1/2 tbs. Diablo Dust or taco seasoning, smoked
  • 15 oz. can tomato sauce
  • 2 tsp. smoked cumin
  • 15 oz. Ranch Style Beans
  • 15 oz. can Black Beans
  • 1 cup chicken stock
  • 1/2 tsp. oregano
  • salt and pepper to taste
  • optional: cilantro

Directions

  1. Saute the onions and garlic in oil, add turkey and cook until lightly browned.
  2. Fire up the crockpot.
  3. Add all the ingredients to it.
  4. Cook 2 hours on high, 4 hours on low, or simmer on stovetop, 1 hour, covered.
