Ingredients

  •     You can substitute 2 pounds extra-hard tofu for the chicken, just reduce the cooking time to 15 to 20 min. Two pounds of salmon or possibly other fish also would work, reduce the cooking time to 10 min per inch of thickness.
  • 1/4 c. Laxmi tamarind concentrate (see note)
  • 1 Tbsp. vegetable oil
  • 2 Tbsp. chopped fresh cilantro
  • 1/2 tsp chili paste (optional)
  • 1/4 tsp salt
  • 2 x garlic cloves, chopped
  • 3 lb chicken drumsticks and thighs

Directions

  1. Heat oven to 475 degrees. In a small bowl, mix tamarind concentrate, oil, cilantro, chili paste if you like, salt and garlic. Add in chicken, turning to coat. Set aside for 10 min.
  2. Spread chicken out on a baking sheet and place in oven. Roast 25 to 30 min, turning once. Chicken is done when juices run clear when meat is pierced with a knife. Serve warm or possibly at room temperature.
  3. Note: Tamarind concentrate is available at Asian and Indian markets.
