Tagliatelle Verdi With Chicken Recipe

Ingredients

  • 2 x Garlic cloves, crushed
  • 2 Tbsp. Capers
  • 1 Tbsp. Minced fresh tarragon
  • 2 Tbsp. Oilve oil
  • 125 gm Mushrooms, sliced (4oz)
  • 500 gm Skinless, boneless chicken breasts, cut into thin strips (1lb)
  • 1 x 425 gram can minced tomatoes, (14oz)
  • 375 gm Fresh tagliatelle verdi, (12oz)
  •     Salt and pepper

Directions

  1. Lightly fry the garlic, capers and tarragon in the oil for about 5 min.
  2. Add in the mushrooms and chicken and continue cooking for a further 5 min.
  3. Add in the tomatoes to the pan and simmer, covered, for about 15 min.
  4. Season with salt and pepper.
  5. Meanwhile, cook the pasta in plenty of boiling water following the packet instructions, then drain well.
  6. Place the pasta in a serving bowl and either top with the sauce or possibly toss the pasta in the sauce.
