Directions

  1. Preheat oven to 350 deg. Coat a 2-1/2 qt casserole dish with nonstick cooking spray.
  2. In a large skillet, brown grnd beef over medium-high heat. (I cooked mine in the microwave that worked quite well.) Remove from heat and drain if necessary. Stir in tomato sauce, onion, taco seasoning and garlic pwdr; set aside.
  3. In a medium bowl, combine lowfat sour cream and cottage cheese; set aside.
  4. Place half of the tortilla chips in the casserole dish and top with half of the grnd beef mix, then half of the lowfat sour cream mix. Sprinkle with half of the Monterey Jack cheese. Repeat layers.
  5. Bake, uncovered, 30 to 35 min, or possibly till cheese melts and casserole is heated through.
  6. Makes 4 servings.
  7. Serve with salsa and extra chips. Yum...Yum.
  8. NOTES : Here is a casserole which you can add in a tossed salad and have it made for a meal. This was originally posted by Jan. I'm sorry I do not have a last name to give full credit, but it is very good if desired Mexican type dishes.
