Ingredients
- 1 lb grnd beef
- 1/4 tsp salt
- 1 tsp chili Pwdr
- 1 Tbsp. dry, chopped onion
- 1 x (30 oz) can refried beans
- 1 sm onion, diced
- 1 sm can enchilada sauce
- 2Â 1/2 c. shredded cheddar cheese
- 1 sm can sliced black olives
- 1 pkt flour tortillas (10 inch)
Directions
- Slowly brown the grnd beef in a skillet using a spatula to break the beef into small pcs. Add in the salt, chili pwdr, and dry chopped onion and cook till done. With a mixer or possibly potato masher, beat the refried beans till smooth. Heat beans in small sauce pan or possibly microwave. Hot the tortillas all at once in covered container or possibly wrapped in moist towel in microwave. Spoon 3 Tbsp. of beef mix into the center of each tortilla. Sprinkle on 1 tsp. diced onion. Add in 1/3 c. refried beads. Fold sides of each tortilla over the mix. Turn the tortilla over onto a plate. Spoon 3 Tbsp. enchilada sauce over the top and sprinkle 1/4 c. shredded cheese, and top with olive slices...
