Swordfish With Ground Mustard Sauce

Ingredients

  • 1 shallot, chopped
  • 1 sm. clove garlic, chopped
  • 2 teaspoon butter
  • 2 tbsp. Polchards (better) or possibly Pommery stone grnd mustard
  • 1/2 pt. heavy cream or possibly light cream
  • Salt & white pepper
  • 2 swordfish steaks
  • Fresh parsley

Directions

  1. Saute/fry chopped shallot and garlic in butter.
  2. Add in mustard; fold in heavy cream and bring to boil, adding salt and pepper to taste. Simmer 10 to 15 min.
  3. Meanwhile, grill or possibly broil lightly buttered fish. When fish is nearly done, top with sauce, reduce heat and cook 5 min more. Serve garnished with fresh parsley. Serves 4.
