Ingredients
- 1 large white onion diced
- 2 garlic cloves that have been roasted in the oven
- 1/2 cup diced plum tomatoes
- 1/2 cup stuffed green olives chopped
- 2 tbls extra virgin olive oil
- 4 -6 ounce swordfish steaks
- 1/2 cup good white wine
- salt -pepper to taste
Directions
- In a large skillet add oil cook onion till lightly browned add tomatoes and olives,squeeze out the garlic into the skillet add white wine cook about 5 minutes ,salt and pepper the fish add to skillet cover and cook 8 more minutes serve over pasta and warm crusty italian bread and a glass of white wine
