  • ½ cup white wine vinegar
  • 1 ½ cup extra-virgin olive oil
  • 1 pinch kosher salt
  • 1 small head Savoy cabbage
  • 1 cup dark green celery leaves (loosely packed)
  • salt and pepper (as needed for seasoning)
  • 1 tablespoon olive oil
  • 2 small shallots (peeled and minced)
  • 8 ounce sweet tooth (hedgehog) mushrooms (may substitute chanterelle or other mild flavored mushroom)
  • cotija cheese (you may substitute ricotta salata, Parmesan or other crumbly, salty cheese)
