pineapple relish on top of pasta with parmesan and sweet italian sausage

Ingredients
- relish:
- pineapple
- cilantro
- white onion
- squeeze of lime
- pasta of choice
- italian sweet sausage
- shallot
- garlic clove
- onion
- parmesan
Directions
- prepare relish or salsa
- eyeball portions where there is more pineapple than onion
- make sure all is diced into small bits
- heat oven to 300 and cook sausage until done
- prepare pasta according to package
- saute onion, shallot, and garlic until onion is clear
- once pasta is done mix in sauteed onion mix and add 1 tbl spn olive oil
- portion pasta on plate
- slice sausage and place on top of pasta
- add parmesan to liking and top with pineapple relish
- Can all be mixed together if you like
