Directions

  1. Prick potatoes and microwave on high till soft. Scoop flesh into large bowl and mash with butter, sugar, juice, marmalade, gingerroot and salt.
  2. Spread mix proportionately in 2-quart. baking dish sprayed with non-stick spray.
  3. Preheat oven to 400F
  4. Using pastry cutter, combine topping ingredients till mix resembles coarse meal. Sprinkle topping over potato mix and bake in middle of oven till topping is lightly browned, about 25 min.
