  • 2 can sweet potatoes in heavy syrup - (40 ounce ea) liquid removed
  • 1/2 c. unsalted butter cut up
  • 1 can crushed pineapple - (20 ounce)
  • 1 c. maple syrup or possibly more
  • 1 pkt large marshmallows - (10 ounce)

Directions

  1. Heat oven to 350 degrees. Place sweet potatoes, butter, pineapple, and maple syrup in a 9- by 13-inch glass baking dish. Combine well, using a potato masher. Place in oven, and bake till bubbling, about 45 min.
  2. Top with marshmallows, and continue to bake for 15 min till marshmallows are soft, but not completely melted.
  3. Serves 8 to 10.
