Ingredients
- For the Scones:
- ¾ pound sweet potatoes (about 3 small)
- 4 cups all-purpose flour
- ⅔ cup granulated sugar
- 4½ teaspoons baking powder
- ¼ teaspoon salt
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- 1 cup cold unsalted butter, cut into 1 tablespoon-size pieces
- ½ cup heavy cream
- ½ cup buttermilk
- For the Maple Cream Glaze:
- 2 cups powdered sugar
- ¼ cup pure maple syrup
- ¼ cup heavy cream
- Pinch of kosher salt

,%20and%20since%20then%20I%20have%20played%20around%20with%20at%20least%20a%20dozen%20different%20types%20of%20scones,%20loving%20each%20and%20every%20one%20for%20their%20unique%20flavors%20and%20textures.%3C/p%3E%3Cp%3EWhen%20I%20saw%20a%20recipe%20for%20sweet%20potato%20scones,%20I%20immediately%20wanted%20to%20taste%20them.%20While%20I%E2%80%99m%20usually%20drawn%20to%20recipes%20for%20sweet%20scones%20(or%20ones%20loaded%20with%20bacon%20and%20cheese),%20these%20sounded%20so%20different%20that%20I%20was%20completely%20intrigued.%20Not%20sure%20what%20to%20expect,%20I%20just%20dug%20right%20into%20the%20recipe,%20and%20was%20rewarded%20with%20some%20of%20the%20most%20fantastic%20scones%20I%E2%80%99ve%20made%20to%20date.%20Tender,%20a%20little%20flaky%20and%20not%20too%20terribly%20sweet,%20the%20sweet%20potato%20flavor%20is%20mild%20and%20fabulous.%3C/p%3E%3Cp%3EBy%20using%20the%20trifecta%20of%20butter,%20cream%20and%20buttermilk,%20you%20end%20up%20with%20scones%20that%20are%20almost%20a%20cross%20between%20scone%20and%20biscuit.%20They%20have%20those%20characteristic%20flaky%20layers%20of%20biscuits,%20while%20retaining%20the%20tender%20crumb%20of%20a%20traditional%20scone.%20These%20scones%20do%20take%20a%20little%20longer%20than%20usual%20to%20prepare%20due%20to%20baking%20and%20cooling%20the%20sweet%20potatoes,%20but%20the%20effort%20is%20well%20worth%20it,%20and%20could%20be%20done%20up%20to%20a%20day%20ahead%20of%20time.%3C/p%3E%3Cp%3EThese%20would%20be%20a%20wonderful%20addition%20to%20any%20fall%20or%20Thanksgiving%20breakfast%20or%20brunch%20that%20you%20have%20planned,%20and,%20cut%20into%20smaller%20rounds,%20could%20be%20a%20fantastic%20roll%20replacement%20at%20the%20Thanksgiving%20dinner%20table.%20You%20definitely%20don%E2%80%99t%20want%20to%20forget%20the%20maple%20cream%20icing%20%E2%80%93%20I%20could%20eat%20that%20stuff%20with%20a%20spoon!%20I%20also%20think%20these%20would%20be%20fabulous%20brushed%20with%20melted%20butter%20and%20sprinkled%20with%20sugared%20pecans%20before%20baking.%3C/p%3E%3Cp%3EWhat%20is%20your%20favorite%20sweet%20potato%20dish?%3C/p%3E%3Cp%3EOne%20year%20ago:%20Salted%20Caramel%20Apple%20Cheesecake%20Pie%3C/p%3E%3Cp%3ETwo%20years%20ago:%20Sweet%20Potato%20Pie%20and%20Pumpkin%20Ice%20Cream%3C/p%3E%3Cp%3EThree%20years%20ago:%20How%20To%20Make%20Perfect%20Pie%20Crust%3C/p%3E%3Cp%3EFour%20years%20ago:%20Fallen%20Chocolate%20Cakes%3C/p%3E%3Cp%3ESweet%20Potato%20Scones%20with%20Maple%20Cream%20Glaze%3C/p%3E%3Cp%3EYield:%2012%20scones%3C/p%3E%3Cp%3EPrep%20Time:%201%20hour%2030%20minutes%3C/p%3E%3Cp%3ECook%20Time:%2015%20to%2020%20minutes%3C/p%3E%3Cp%3ETotal%20Time:%202%20hours%3C/p%3E%3Cp%3ELight%20and%20tender,%20these%20Sweet%20Potato%20Scones%20are%20perfect%20for%20a%20fall%20brunch%20or%20a%20surprise%20side%20dish%20for%20Thanksgiving.%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3E1.%20Make%20the%20Scones:%20Preheat%20oven%20to%20400%20degrees%20F.%20Line%20a%20baking%20sheet%20with%20parchment%20paper.%3C/p%3E%3Cp%3E2.%20Prick%20the%20sweet%20potatoes%20all%20over%20with%20the%20tines%20of%20a%20fork%20and%20bake%20on%20the%20prepared%20pan%20until%20tender,%2030%20to%2040%20minutes.%20Remove%20from%20the%20oven%20and%20let%20cool%20to%20the%20touch,%20about%2010%20minutes.%3C/p%3E%3Cp%3E3.%20Cut%20the%20potatoes%20in%20half%20lengthwise,%20scoop%20out%20the%20flesh%20into%20a%20medium%20bowl,%20and%20lightly%20mash%20with%20a%20fork.%20Cover%20the%20bowl%20and%20refrigerate%20until%20cool,%20at%20least%2020%20minutes.%3C/p%3E%3Cp%3E4.%20Increase%20the%20oven%20temperature%20to%20425%20degrees%20F.%20Line%20two%20baking%20sheets%20with%20parchment%20paper;%20set%20aside.%3C/p%3E%3Cp%3E5.%20In%20a%20large%20bowl,%20whisk%20together%20the%20flour,%20sugar,%20baking%20powder,%20salt,%20cinnamon%20and%20nutmeg.%20Use%20your%20fingers%20or%20a%20pastry%20blender%20to%20incorporate%20the%20butter%20into%20the%20flour%20mixture%20until%20the%20dough%20is%20crumbly%20and%20contains%20lumps%20the%20size%20of%20small%20peas.%3C/p%3E%3Cp%3E6.%20Add%20the%20cooled%20sweet%20potatoes%20and%20%C2%BC%20cup%20of%20the%20heavy%20cream%20and%20lightly%20stir%20into%20the%20flour%20mixture.%20Add%20the%20remaining%20%C2%BC%20cup%20cream%20and%20the%20buttermilk%20and%20stir%20until%20just%20mixed.%20Do%20not%20overwork%20the%20dough.%3C/p%3E%3Cp%3E7.%20Turn%20the%20dough%20out%20onto%20a%20lightly%20floured%20surface%20and%20gently%20knead%20it%20a%20few%20times%20until%20it%20comes%20together%20into%20a%20cohesive%20mass.%20Lightly%20coat%20your%20hands%20with%20flour%20and%20gently%20pat%20the%20dough%20into%20%C2%BE-inch-thick%20rectangle%20(mine%20was%20about%2011x9%20inches%20in%20size).%20Cut%20the%20dough%20into%206%20squares,%20then%20cut%20each%20square%20on%20the%20diagonal%20to%20make%20triangle-shaped%20scones.%3C/p%3E%3Cp%3E8.%20Transfer%20the%20scones%20to%20the%20prepared%20baking%20sheets%20and%20bake%20for%2015%20to%2020%20minutes,%20or%20until%20the%20scones%20are%20a%20light%20golden%20brown.%20Immediately%20transfer%20the%20scones%20to%20a%20wire%20rack.%3C/p%3E%3Cp%3E9.%20Make%20the%20Glaze:%20In%20a%20medium%20bowl,%20whisk%20together%20the%20powdered%20sugar,%20maple%20syrup,%20heavy%20cream%20and%20salt,%20until%20smooth.%20Add%20more%20cream%20a%20tablespoon%20at%20a%20time%20if%20needed%20to%20thin%20the%20icing%20to%20a%20drizzling%20consistency.%20Drizzle%20the%20icing%20over%20the%20warm%20scones.%20Serve%20the%20scones%20warm%20or%20at%20room%20temperature.%20The%20scones%20are%20best%20eaten%20the%20same%20day%20they%20are%20made,%20but%20can%20be%20stored,%20wrapped%20in%20plastic%20wrap,%20at%20room%20temperature%20for%20up%20to%202%20days.%3C/p%3E){kind=link}
