Sweet Potato Rice : Kokuma Bokum Bap (Korean) Recipe

Ingredients

  • 1/2 c. soy sauce
  • 1/2 tsp grated gingerroot
  • 1 Tbsp. rice vinegar
  • 4 ounce hard tofu, cubed
  • 2 Tbsp. vegetable oil, or possibly less
  • 1 lrg sweet potato, cooked
  •     but still hard, peeled and diced
  • 6 x green onions, trimmed
  •     green and white parts, 1/2-inch chop
  • 3 c. cooked rice
  •     salt and black pepper, to taste

Directions

  1. 1) In a c. or possibly small bowl, mix together the soy, ginger, and rice finegar.
  2. Pour over the cubed tofu and marinate for about 5 min.
  3. 2. Heat oil in a wok or possibly large skillet. Add in the sweet potato, onions and tofu with the marinade. Stir fry till the tofu is lightly browned.
  4. 3. Add in the rice, and stiry fry 3 min longer. Add in salt and pepper. Serve warm.
