Ingredients

  • 1-¼ lbs (2 small or 1 large) sweet potatoes
  • 3 cups all purpose flour
  • 1 tablespoon plus 1 teaspoon baking powder
  • 2 teaspoons granulated sugar
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 10 tablespoons cold unsalted butter, cut into small pieces
  • 1 cup buttermilk
  • 1 lb sliced country ham
  • Olive oil (about 1 tablespoon)
  • 2/3 cup honey mustard
  • Special equipment: pastry blender (or two forks), rolling pin, 1 ½-inch round cutter
