,%20you%20just%20can%E2%80%99t%20help%20be%20drawn%20into%20a%20sense%20of%20calmness%20after%20some%20of%20her%20reads.%20And%20her%20down-to-earth,%20Mex-Tex%20border-style%20recipes%20are%20so%20appealing,%20photos%20are%20so%20darn%20astonishing,%20it%E2%80%99s%20like%20visiting%20a%20cooking%20show%20for%20amazement,%20sometimes%20a%20street%20vender%20for%20a%20sensory%20test%20and%20sometimes%20when%20we%E2%80%99re%20lucky,%20a%20reality%20show%20for%20comic%20relief.%3C/p%3E%3Cp%3EEdinburg%20Texas%20is%20just%20a%20good%20stone%E2%80%99s%20throw%20to%20the%20Rio%20Grande%20if%20I%E2%80%99m%20not%20mistaken%20and%20I%20have%20a%20feeling%20she%20is%20native%20to%20some%20part%20of%20the%20southern%20Texas%20region.%20If%20not,%20she%20has%20settled%20pretty%20darn%20well%20into%20the%20Texas%20sweet%20life.%20Her%20two%20girls%20and%20hubby%20all%20seem%20to%20be%20in%20harmony%20with%20a%20life%20some%20of%20us%20can%20only%20dream%20of%20living.%3C/p%3E%3Cp%3ESo%20my%20friends%20in%20Texas%20and%20elsewhere,%20I%20want%20to%20share%20a%20few%20recipes%20that%E2%80%99s%20sweet%20on%20my%20list.%20Now%20these%20tacos%20are%20not%20meant%20to%20contend%20nor%20even%20compare%20with%20a%20few%20Bonnie%20posted%20back%20in%20July.%20I%E2%80%99m%20talking%20about%20Diana%20Barrios%E2%80%99%20puffy%20tacos%20with%20that%20great%20beef%20picadillo%20and%20the%20spicy%20rajas%20de%20poblano.%20You%20can%20find%20the%20recipes%20in%20her%205%20part%20series%20featuring%20Diana.%20This%20one%20also%20has%20her%20puffy%20taco%20recipe%20from%20the%20Food%20Network%E2%80%99s%20Throwdown%20with%20Bobby%20Flay.%3C/p%3E%3Cp%3EMy%20tacos%20are%20great%20served%20with%20a%20side%20of%20frijoles%20refritos%20or%20my%20Frijoles%20Charros.%20Both%20of%20the%20meats%20are%20flavorful,%20not%20as%20spicy%20as%20it%20sounds%20and%20grilling%20quickly%20over%20a%20hot%20fire%20leaves%20the%20meat%20extra%20saucy.%20To%20top%20these%20off,%20I%20roasted%20up%20some%20rajas%20of%20sweet%20red%20bell%20peppers%20and%20onions%20and%20made%20a%20salsa%20with%20some%20left-over%20ears%20of%20corn%20and%20chiles.%20%20%20Enjoy!%3C/p%3E%3Cp%3E1/4%20teaspoon%20sea%20saltBrush%20oil%20over%20the%20tomatoes,%20chiles%20and%20corn.%20Place%20over%20a%20medium%20heated%20grill%20turning%20often%20until%20corn%20is%20brown%20and%20the%20skin%20of%20tomatoes%20and%20chiles%20are%20blistered.%20Place%20corn%20aside%20to%20cool%20and%20put%20the%20tomatoes%20and%20chiles%20in%20a%20plastic%20or%20brown%20paper%20bag%20to%20sweat%20for%20about%2020%20minutes.%20Roasting%20the%20vegetables%20is%20easy%20in%20the%20oven%20as%20well%20as%20on%20the%20stove-top.%3C/p%3E%3Cp%3ECut%20the%20kernels%20from%20the%20cob%20into%20a%20bowl.%20Peel%20the%20skins%20from%20the%20chiles%20and%20tomatoes.%20Remove%20and%20discard%20the%20seeds%20and%20give%20both%20chiles%20and%20tomatoes%20a%20rough%20chop.%20Place%20in%20the%20bowl%20with%20the%20corn%20along%20with%20remaining%20ingredients.%20Stir%20and%20allow%20to%20marinate%20covered%20in%20the%20refrigerator%20for%20at%20least%20an%20hour%20to%20develop.%3C/p%3E%3Cp%3ENote:%20Add%20a%20chopped%20mango%20or%20grilled%20peaches%20to%20sweeten%20this%20up%20if%20desired.%3C/p%3E){kind=link}
