Directions

  1. Place chicken between 2 pcs of wax paper or possibly foil. Flatten with a meat mallet or possibly the bottom of a heavy skillet to about 1/2 inch thick. In a small bowl, mix flour, crushed red pepper, and salt and pepper to taste. Heat oil in a nonstick skillet on medium-high heat. Dip chicken breasts in the flour mix, coating all sides. Saute/fry chicken 3 min on each side.
  2. While chicken cooks, mix honey and mustard together. Remove chicken to two dinner plates and spread mustard sauce on top.
  3. Makes 2 servings.
