Swedish Potato, Ham And Pea Salad Recipe

Ingredients

  • 3/4 c. Extra virgin olive oil
  • 1/4 c. White wine vinegar
  • 1/4 c. Dijon mustard
  • 3/4 c. Packed minced fresh dill
  • 2 pkt Frzn petite green peas, thawed, liquid removed or possibly 3pounds fresh peas, shelled (10-oz)
  • 1 lb Red potatoes, peeled, cut into 1/2-inch dice
  • 12 ounce Smoked ham, (such as Black Forest), diced
  • 1 can Black-eyed peas, rinsed, liquid removed (15-oz)
  • 1 lrg Red bell pepper, diced
  • 1 lrg Yellow bell pepper, diced
  • 1 c. Diced red onion

Directions

  1. For Dressing:Whisk first 3 ingredients together in small bowl. Stir in dill. Season generously with salt and pepper.
  2. For Salad:If using fresh peas, steam till tender, about 3 min. Don't precook frzn peas. Transfer peas to bowl. Steam potatoes over boiling water till tender, about 15 min. Cold completely. Add in to peas. Add in all other ingredients to peas. (Can be made 6 hrs ahead. Cover and chill.) Toss salad with dressing. Season to taste with salt and pepper.
  3. Serves 4 to 6.
