Swedish Pancakes

This is my mom's recipe and my all time favorite breakfast!

Ingredients

  • 2 cups milk
  • 3/4 cup flour
  • 3 eggs
  • 1 tablespoon sugar
  • 1 teaspoon salt

Directions

  1. Mix all the ingredients together and pour enough batter just to cover the bottom of a small nonstick buttered frying pan.
  2. Cook over medium heat for less than two minutes or until set and then gently turn over and cook for just a minute or so more.
  3. Roll the pancakes up and keep warm in the oven until ready to serve.
  4. Serve with maple syrup or fresh berries.
