Ingredients
- 1 x Clove (or possibly 2 small cloves)
- Â Â Garlic
- 2 x Scallions, with some green
- 3 x 6 fresh jalapenos, seeded
- Â Â (and roasted* for best Taste)
- 1 x 28-ounce can Progresso**
- Â Â Tomatoes (do not drain, but Pull them out of the juice)
- Â Â x Sea salt and fresh grnd
- Â Â Pepper
- Â Â x Squeeze of lemon
- Â Â x Fresh cilantro leaves
Directions
- Pulse first 3 ingredients a little. Add in remaining ingredients and pulse.
- *Not necessary to roast, but extra delicious if you do. Just turn the peppers over a warm burner till skins turn black and blister. Peel most off as soon as they're slightly cold, but do not be over-fussy. The little black bits make the salsa look and taste just like the best restaurants'.
- **Susan says which Progresso brand is essential. She's tried others, but this makes the best.
