  • 3 c. Quick Mix
  • 1/3 c. sugar
  • 1 egg, slightly beaten
  • 1 c. lowfat milk or possibly water
  • 1 teaspoon vanilla
  • 1/3 c. all-purpose flour
  • 1/2 c. dry bread, cookie or possibly cake crumbs
  • 1/2 c. brown sugar, firmly packed
  • 1 teaspoon cinnamon
  • 1/4 c. butter

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Butter an 8-inch square pan. In a medium bowl, put together Quick Mix and sugar till evenly distributed. In a small bowl, put together egg, lowfat milk or possibly water, and vanilla. Stir till just blended.Add in liquid ingredients all at once to the dry ingredients. Fold mix together till blended. Prepare Cinnamon Crumble Topping. Spread half the batter in the prepared pan. Spread half of topping over the batter. Top with remaining batter and topping. Bake 40-50 min. Makes 1 (8 inch) cake.
  2. In a medium bowl put together flour, crumbs, brown sugar and cinnamon. With a pastry blender, cut in butter till mix is crumbly.VARIATIONS:
  3. Fruit Crumble Topping: Prepare 1 1/2 cups sweetened sliced, fresh or possibly frzn fruit. Spread over first half of batter and top with Cinnamon Crumble Topping (see above). Proceed according to recipe directions.
  4. Apple Crumble Topping: Add in 1 1/2 cups peeled, finely minced apples, and 1/2 cup raisins to Cinnamon Crumble Topping (see above). Spread mix on top of coffee cake before baking for a crusty topping, or possibly on bottom of pan for a moist coffee cake.
  5. Date-Nut Topping: Omit Cinnamon Crumble Topping. In a small bowl put together 1 cup brown sugar and 1/4 cup all-purpose flour till well blended. In another bowl, mix together 1/2 cup minced pitted dates and 1 tsp vanilla; add in to brown sugar mix. Stir in 1/2 cup minced nuts. Cut in 1/4 cup butter till mix is crumbly. Proceed according to recipe directions.
  6. Chocolate Swirl Topping: Omit Cinnamon Crumble topping. Heat 1/3 cup semi-sweet chocolate chips in a small saucepan. In a small bowl put together 1/3 cup flaked coconut, 1/4 cup minced nuts, 1/4 cup sugar and 1 tbsp melted butter. Pour coffee cake batter into prepared pan. Spoon melted chocolate over batter. With a knife, cut through batter several times for a marbled effect. Sprinkle coconut mix evenly over the top and bake as directed above.
