Sunday Supper Italian Pork Roast and Gravy Recipe

Pork comfort food with an Italian herb gravy that pairs well with noodles, rice, or potatoes, and roasted vegetables.

Directions

  1. Heat the oven to 375 F.
  2. Line a roasting pan with foil.
  3. Sprinkle flour and dry seasonings over the roast.
  4. Add the garlic and onions.
  5. Add wet ingredients, cover roast.
  6. Bake 3-4 hours, or until fork tender.
  7. Remove roast from pan, cover.
  8. Pour juices into a container, put in the freezer.
  9. When fat has congealed at the top, skim and discard it.
  10. Make a roux with the butter and flour. Slowly add broth, then the wine and juices. Add the seasonings.
  11. Reduce to desired consistency, at least 10 minutes.
