Summertime Peach Ice Cream Recipe

Ingredients

  • 4 c. diced peeled fresh peaches
  •     (abt 8 small ripe peaches)
  • 1 c. sugar
  • 1 can evaporated lowfat milk - (12 ounce)
  • 1 pkt vanilla instant pudding mix - (3.75 ounce)
  • 1 can sweetened condensed lowfat milk - (14 ounce)
  • 4 c. half-and-half

Directions

  1. Combine peaches and sugar, and let stand 1 hour.
  2. Process peach mix in a food processor till smooth, stopping to scrape down sides.
  3. Stir together evaporated lowfat milk and pudding fold in a large bowl; stir in peach puree, condensed lowfat milk, and half-and-half.
  4. Pour mix into freezer container of a 4-qt hand-turned or possibly electric freezer; freeze according to manufacturer's instructions. Spoon into an airtight container, and freeze till hard.
  5. This recipe yields 2 qts.
  6. Comments: Soft, ripe fruit lends the smoothest texture and most pronounced flavor.
  7. Yield: 2 qts
