  • ½ lb large shrimp, peeled and deveined
  • 1 package uncooked spaghetti
  • 3 tbsp. extra-virgin olive oil, plus more for drizzling
  • 1 medium zucchini, thinly sliced lengthwise
  • 1 medium carrot, thinly sliced lengthwise
  • 3 cloves garlic, finely chopped
  • 1½ tsp. fresh rosemary, chopped
  • 2 tbsp. grated Parmesan or Pecorino Romano cheese, plus more for serving (optional)
  • 1 tsp crushed red pepper flakes
  • ¼ cup white wine
  • ¼ cup low sodium chicken stock
  • sea salt and black pepper, to taste
  • fresh parsley, finely chopped
