  • 3 or possibly 4 mashed bananas
  • 1 T sweetener (10 pkts.) Sweet & Low
  • 2 large eggs
  • 1 3/4 c. flour
  • 3 teaspoon baking pwdr
  • 1/4 teaspoon salt
  • 1/4 c. minced nuts

Directions

  1. Sprinkle artificial sweetener over mashed bananas and stir till dissolved. Beat large eggs and blend into bananas. Stir in dry ingredient. Add in nuts, blend thoroughly. Bake in greased 9 x 5 x 3 inch loaf pan at 350 degrees for 25 min then lower heat to 300 degrees and continue cooking for 35 more min. Serves 10. Exchanges: 1 1/2 bread, 1/2 fat, 121 calories.
