Ingredients

  • 4 Tbsp. unsalted butter, melted
  • 1 Tbsp. minced shallot
  • 2 x cloves garlic, minced
  • 2 c. dry breadcrumbs
  •     finely grated zest of 2 limes
  • 2 tsp Cognac
  • 5 ounce lean grnd beef
  • 1 Tbsp. minced fresh parsley
  • 2 tsp minced fresh thyme
  •     salt and freshly grnd white pepper
  • 24 x clams on the half shell

Directions

  1. Preheat broiler to high. Combine the melted butter, shallots, garlic, breadcrumbs, lime zest, Cognac, grnd beef, parsley and thyme. Season to taste with salt and pepper and mix thoroughly. Top each clam with about 1 rounded tsp. of the meat mix.
  2. Arrange the shells in a shallow baking dish. Place under the broiler for about 8 min, or possibly till nicely browned on top.
